I know! Gazpacho is Spanish not Scottish but more and more people are growing their own tomatoes on windowsills, back door steps or wherever they can fit one of those ‘grow your own’ bags and reporting bumper harvests this summer thanks to all the fabulous sunshine we have been enjoying.
So what better time to sling together my Scottish version of Gazpacho, feel a little smug on the back of your gardening efforts and wow your friends and family! And, serve it the Spanish way in tall glasses that have been sitting in the fridge for a few hours. I wonder if they are serving this in the Commonwealth Athletes Village? They should be!
